Cake
- 1 1 box Betty Crocker™ Delights Super Moist™ Lemon Cake Mix
- 1 1/2 teaspoons lemon zest
- 2 tablespoons fresh lemon juice
- 1 cup water
- 1/2 cup vegetable oil
- 3 eggs
Vanilla and Blueberry Buttercream Frosting
- 3 cups (6 sticks) unsalted butter, room temperature
- 9 cups powdered sugar
- 1 teaspoon kosher salt
- 4 teaspoons vanilla extract
- 3/4 cup heavy cream
- 2 cups blueberry jam
- Pastel blue gel food color from 1 box Betty Crocker™ Pastel Gel Food Color
- Pastel yellow gel food color from 1 box Betty Crocker™ Pastel Gel Food Color

Instructions

Step1Heat oven to 350ºF. Grease bottom of 3 (6-inch) round cake pans.

Step2In a large mixing bowl, combine the cake mix and lemon zest. Rub between your fingers to evenly distribute the lemon zest.

Step3Beat cake mix, zest, lemon juice, water, vegetable oil, and eggs with an electric mixer on medium speed until combined. Divide the batter evenly between pans.

Step4Bake 26 to 31 minutes, or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pans to cooling rack. Cool completely, about 1 hour.

Step5In a large mixing bowl, beat the butter, powdered sugar, and salt on low speed until smooth.

Step6Stir in the vanilla extract and heavy cream and beat until combined. Increase speed to medium and beat until fluffy.

Step7Transfer 2 cups of buttercream frosting to a medium bowl and stir in the blueberry jam.

Step8Tint 1 cup of the remaining frosting yellow by adding food gel a few drops at a time and stirring between each addition until the desired color is reached. Leave 1 cup white.

Step9Tint the remaining buttercream frosting light blue by adding food gel a few drops at a time and stirring between each addition until the desired color is reached.

Step10Use blueberry frosting as filling between layers. Frost cake as desired.
