These Wickedly Good Sandwich Sugar Cookies were created in honor of the new movie, Wicked, out in theaters November 2024. With shimmery pink and green, these sugar cookies are the perfect nod to the awesome duo that is Glinda and Elphaba. Plus, with just a few simple ingredients and a little elbow grease, these delicious cookies will have you defying gravity, too! Vanilla is the star of the show with this vibrant treat, shining through in the sugar cookie base and also the lush and creamy vanilla frosting. The end result is a beautifully swirled cookie that is soft, chewy and bursting with buttery vanilla flavor. It’s the perfect dessert to bake and enjoy with your favorite bestie!

Ingredients

Sugar Cookies

  • 1 pouch (17.5 oz) Betty Crocker™ Sugar Cookie Mix
  • 1/2 cup salted butter, melted
  • 1 egg
  • 1 teaspoon pure vanilla extract
  • Pastel green and pink gel food color from 1 box Betty Crocker™ Pastel Gel Food Color
  • Betty Crocker™ White Shimmer Sugar Sprinkles

Filling

    In a medium bowl, stir the cookie mix, melted butter, egg and vanilla until dough forms.

    Divide the dough into two equal parts. To half the dough, add a small amount of green gel food color, adding more if needed. Repeat with second half of dough, adding pink gel food color.

    Roll both the green and pink dough into .5 oz size balls. Alternate stacking four dough balls together (green, pink, green, pink) and press together before rolling into balls. Repeat with remaining dough. Refrigerate for 1 hour.

    Meanwhile, heat your oven to 375°F. Dip the top of each dough ball in white shimmer sugar before baking on a parchment-lined cookie sheet. Bake for 10 to 15 minutes or until the cookie edges are just set.

    Remove cookies from the oven and let sit at least 5 to 10 minutes before removing to a wire rack to cool.

    Once the cookies are cooled, add a small dollop of frosting to the bottom of one cookie. Place a second cookie on top to make a completed sandwich cookie. Repeat with remaining cookies.
