Ingredients

  • 1 1/2 lb bulk pork sausage
  • 1 cup chopped bell pepper (any color)
  • 1/2 cup chopped onion
  • 3 cups frozen hash brown potatoes
  • 2 cups shredded cheddar cheese (8 oz)
  • 1 cup Bisquick™ Original Pancake & Baking Mix
  • 2 cups milk
  • 1/4 teaspoon pepper
  • 4 eggs

    Heat oven to 400°F. Grease or spray 13x9-inch (3-quart) baking dish.

    In 12-inch skillet, cook sausage, bell pepper and onion over medium heat 10 to 12 minutes, stirring occasionally, until sausage is no longer pink; drain. Stir together sausage mixture, potatoes and 1 1/2 cups of the cheese in baking dish.

    In medium bowl, stir remaining ingredients except remaining cheese with fork or wire whisk. Pour into baking dish.

    Bake uncovered 38 to 43 minutes or until knife inserted in center comes out clean. Sprinkle with remaining cheese. Bake 1 to 2 minutes longer or just until cheese is melted. Let stand 5 minutes before serving.
