Created for our cookbook, Betty Crocker Cookbook, 13th edition, this delicious eggnog means no one has to go without! It's gluten free, vegetarian and vegan but equally as delicious as the original recipe.
Double-Vanilla Vegan "Eggnog"

Ingredients
- 4 pitted whole dates
- 1/2 cup hot tap water
- 3 1/2 cups vanilla almond milk
- 1 can (13.55 oz) coconut milk (not low-fat)
- 2 teaspoons vanilla
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground cinnamon
- 1 vanilla bean
- 1/2 cup rum or 1 teaspoon rum extract
- Toppings, if desired: refrigerated non-dairy whipped topping, cinnamon sticks
Instructions

Step1In small bowl, soak dates in water 5 minutes to soften. Drain well.

Step2In blender, place dates and remaining ingredients except vanilla bean, rum and Toppings. Split vanilla beans in half lengthwise; scrape seeds into blender. Discard pods or save for another use. Cover; blend on High speed 2 to 3 minutes or until well blended. Cover and refrigerate at least 1 hour.

Step3Just before serving, stir rum into almond milk mixture until well blended; pour into pitcher or small punch bowl. Top each serving with Toppings.
