Tomato-Topped Canadian Bacon and Cheese Frittata (Cooking for 2)

Ingredients

  • 4 eggs
  • 2 tablespoons milk
  • 1/4 teaspoon pepper
  • 2 oz chopped Canadian bacon (1/3 cup)
  • 1/4 cup shredded sharp Cheddar cheese
  • 1 1/2 teaspoons olive oil
  • 1/4 cup chopped shallots or onion
  • 1 1/4 cups fresh spinach leaves, chopped
  • 1/2 cup chopped tomato (about 1 medium)

Instructions

    Heat oven to 400°F. In medium bowl, beat eggs, milk and pepper with whisk just until blended; stir in Canadian bacon and cheese; set aside.

    In 8-inch ovenproof nonstick skillet, heat 1 teaspoon oil over medium heat. Add shallots; cook 1 to 2 minutes or until tender. Add 1 cup of the spinach, stirring constantly, just until it begins to wilt.

    Pour egg mixture into skillet; cook 1 to 2 minutes, or until edges are set. Carefully place skillet in oven; bake 6 to 8 minutes, or until knife inserted in center comes out clean. Let stand 5 minutes.

    Meanwhile, in small bowl, combine remaining 1/4 cup spinach, the tomatoes and remaining olive oil. To serve, cut frittata into wedges; top with tomato mixture.
