Chocolate Espresso Buttercream Frosting

  • 3 cups (6 sticks) unsalted butter, room temperature
  • 9 cups powdered sugar
  • 3/4 cup Dutch processed cocoa powder
  • 2 teaspoons instant espresso powder
  • 1 teaspoon kosher salt
  • 4 teaspoons vanilla extract
  • 3/4 cup heavy cream
  • Black food gel

Toppings

  • Gray pearl sprinkles, for decorating

    Heat oven to 350ºF. Grease bottom of 3 6” round pans.

    In a large mixing bowl beat cake mix, coffee, vegetable oil, and eggs with an electric mixer on medium speed until combined.

    Divide the batter evenly between the 3 pans. Bake 28 to 33 minutes, or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pans to cooling rack. Cool completely, about 1 hour.

    In a large mixing bowl, beat the butter, sugar, cocoa powder, espresso powder, and salt with an electric mixer on low speed until smooth.

    Add in the vanilla extract and heavy cream and beat until combined.

    Increase speed to medium and beat until fluffy.

    Tint 2 cups of buttercream frosting dark gray by adding a few drops of food gel at a time and stirring thoroughly between each addition until the desired color is reached.

    Tint the remaining buttercream frosting black by adding food gel, a few drops at a time, and stirring between each addition until the desired color is reached.
