Mediterranean Chicken Sandwiches

Ingredients

Dressing

  • 3 tablespoons reduced-fat mayonnaise or salad dressing
  • 1/2 teaspoon dried oregano leaves
  • 1/4 teaspoon dry ground mustard
  • 1/4 teaspoon dried basil leaves
  • 1 small clove garlic, minced

Sandwiches

  • 8 slices multigrain bread
  • 1 cup fresh spinach leaves
  • 1 package (6 oz) sliced cooked chicken breast
  • 1/2 medium cucumber, cut into 20 thin slices
  • 4 thin slices red onion

Instructions

  • Step

    In small bowl, mix dressing ingredients until well blended. Spread about 1 teaspoon dressing on each slice of bread.

    Top 4 slices of bread evenly with spinach, chicken, cucumber and onion. Cover each with second slice of bread, dressing side down. Wrap each sandwich securely with foil or plastic wrap; take with you for an on-the-go dinner.
