If there’s one thing we’ve all learned from over 100 years of Betty Crocker™ kitchen magic, it’s that creativity and convenience can come together to create something truly special. With Betty Crocker’s sugar cookie mix and vanilla frosting, I whipped up a wickedly delicious and easy-to-make treat—pink and green Marbled Sugar Cookie Sandwiches! These vibrant cookies celebrate the dynamic duo of Glinda and Elphaba from Wicked. Combining the sweet essence of Glinda with the boldness of Elphaba, these cookie sandwiches are the perfect nod to their unique and magical personalities.

This recipe brings together two Betty Crocker™ products—Betty Crocker™ Sugar Cookie Mix and Rich & Creamy Vanilla Frosting—creating a perfect union of flavor and fun, just like Glinda and Elphaba. We’re bringing the duo to life with bold pink and green marbled cookies, representing the iconic characters’ vibrant personalities. Plus, they’re sandwiched with a smooth vanilla frosting that ties it all together in every bite.

Frequently Asked Questions

Can I add sprinkles?

Yes! You can roll the cookie dough in sanding sugar sprinkles before baking, or add some sprinkles to the edges of the frosting before sandwiching the baked cookies together.

How do I store leftovers?

These cookie sandwiches can be stored in an airtight container at room temperature for up to 3 days or refrigerated for up to a week.

Do I need to use a piping tip and piping bag?

No, I love how pretty they are when piped, but you can simply spread the frosting on the inside using a spoon or butter knife!

Ingredients

Instructions

  • Step
    1
Heat your oven to 350°F and line baking sheets with parchment paper. In a large bowl, stir together cookie mix, softened butter and water until a dough forms.
  • Step
    2
Divide the dough into 3 equal parts and place in separate bowls. Add desired amount of pink food color to one bowl, green food color another, and leave the third one plain. Mix well until completely combined.
  • Step
    3
Using a teaspoon or small cookie scoop, scoop dough into 18 evenly-sized balls of each dough color. To marble the dough, combine 1 pink, 1 green and 1 uncolored dough ball. Roll together just enough to combine them into a larger-size dough ball but don’t over-mix, or you’ll lose the swirl pattern. Repeat to create 18 marbled dough balls.
  • Step
    4
Place them on the prepared baking sheets and bake for 8 to 10 minutes or until the edges are just set. Let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  • Step
    5
Once cooled, add frosting into your Betty Crocker™ Decorating Bag fitted with a star tip. Pipe onto the flat side of one cookie. Place another cookie on top to create a sandwich.
  • Step
    6
Enjoy! These magical cookies are perfect for a Wicked movie night or as a fun treat with friends and family.
