If your family loves lasagna or spaghetti, then you’ll love this easy-to-make dinner pie with similar flavors. From our Found Recipes cookbook, a quick chicken filling is made with tomato pasta sauce, mozzarella cheese, and seasonings and spread in a pie plate. Then a pourable crust (or as we call it, an “Impossible Pie” crust) is made by mixing Bisquick with milk, both Parmesan and cottage cheeses, and eggs. You just pour over the filling mixture…no pastry making, rolling, or shaping is required!
When our Parmigiana pie it’s almost done baking, even more mozzarella cheese is sprinkled over the top to get melty as the pie finishes baking, creating an Italian dinner that’s loaded with flavor. We love serving this family-style supper with a side of veggies cooked on the stove-top while the pie bubbles away in the oven. Either cauliflower and broccoli with herb butter or brown sugar-glazed carrots make a tasty and colorful buddy on the plate. You could even bake cheesy garlic bread alongside the pie, so it’s ready to serve at the same time. Now that’s a dinner everyone will rush to the table for!
Impossibly Easy Chicken Parmigiana Pie

Ingredients
- 1 cup chopped cooked chicken (about 5 oz)
- 1 cup shredded mozzarella cheese (4 oz)
- 1/4 teaspoon garlic powder
- 1/4 teaspoon dried basil leaves
- 1 cup tomato pasta sauce
- 2/3 cup Bisquick™ Original Pancake & Baking Mix
- 3/4 cup milk
- 1/2 cup small-curd cottage cheese
- 1/4 cup grated Parmesan cheese
- 2 eggs
- 1/4 teaspoon pepper

Step1Heat oven to 400°. Grease 9-inch pie plate with vegetable shortening or spray with cooking spray.

Step2In medium bowl, mix chicken, 1/2 cup of the mozzarella cheese, the garlic powder and basil; spread in bottom of pie plate. Pour pasta sauce over chicken mixture. In medium bowl, whisk together remaining ingredients except remaining 1/2 cup mozzarella cheese until blended. Pour over mixture in pie plate.

Step3Bake 28 to 32 minutes or until knife inserted in center comes out clean. Top with remaining 1/2 cup mozzarella cheese. Bake an additional 2 to 3 minutes longer or until cheese melts. Cool 5 minutes before serving.
