Frosting

  • 12 tablespoons (1 1/2 sticks) unsalted butter, room temperature
  • 4 oz (half of 8-oz package) cream cheese, room temperature
  • 3 1/2 cups powdered sugar
  • 3 tablespoons fresh strawberry puree
  • 1/2 teaspoon vanilla
  • Pinch of coarse kosher salt
  • 1 cup sliced fresh strawberries (about 10 medium), to layer in between the frosting and cake

    Preheat the oven to 350°F.

    In a large bowl and using a handheld electric mixer, beat the cake mix with the buttermilk, oil, eggs, egg yolks, vanilla and a pinch of coarse kosher salt for 90 seconds.

    Spray three 8-inch cake pans with non-stick baking spray containing flour. Divide the batter evenly between each cake pan, about 1 1/4 cups each. (A baking scale is the most accurate way to measure.)

    Bake for about 13 minutes or until a toothpick inserted in the center comes out clean.

    Cool in pans for 10 minutes before flipping the cakes onto cooling racks. Let them cool completely before frosting, about 1 hour.

    Meanwhile, using an electric mixer fitted with the paddle attachment, beat together the unsalted butter and cream cheese (both at room temperature) on low speed until thoroughly combined. Slowly add the powdered sugar 1/2 cup at a time. Then add fresh strawberry puree, vanilla and a pinch of coarse kosher salt.

    Place one cake layer on serving plate. Spread some frosting and place 1/2 cup fresh strawberries on top. Repeat with second cake layer and remaining 1/2 cup strawberries. Top with third cake layer. Add a crumb layer of frosting; refrigerate for 30 minutes. Finish frosting sides and top of cake with remaining frosting.
