  • 1 cup cold heavy whipping cream
  • 1 tablespoon powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1 jar strawberry preserves
  • Fresh strawberries, if desired

    Heat your oven to 350°F. Spray 2 (8-inch) round cake pans with cooking spray and set aside.

    In a medium bowl, mix the cake mix, water, oil, and eggs until completely combined.

    Evenly divide the cake batter between pans. Bake for 26 to 31 minutes, using a toothpick in the cake center around 26 minutes to see if it comes out clean. If it does, remove from oven. If not, continue baking for 5 more minutes.

    Cool the cakes for 10 minutes in pans. Then, place the cakes in the fridge for an hour to cool.

    In a chilled medium bowl, beat whipping cream, powdered sugar, and vanilla on medium speed with electric mixer fitted with a whisk attachment for about 8 to 10 minutes or until stiff peaks form. (The cream should be cold to properly whip.)

    Using a serrated knife, level off rounded cake tops if needed. Place 1 cake layer on a cake stand. Spread strawberry preserves as desired on top. Then, spread half the whipped cream on top of the preserves.

    Add the second cake layer; repeat spreading preserves as desired and whipped cream on top. Add chopped fresh strawberries on top of the whipped cream layer, if desired. Store any leftovers in an airtight container in the refrigerator for up to 2 days. Note, due to the fresh whipped cream, it’s best enjoyed soon after assembling.
