Caramelized Shallot Jam

- 2 tablespoons olive oil
- 4 large shallots, thinly sliced (about 1 cup)
- 1/2 cup packed brown sugar
- 1/4 cup red wine vinegar
- 1/4 teaspoon salt
- 6 oz chèvre (goat) cheese
- Food Should Taste Good™ peppercorn blend brown rice crackers, as desired
Instructions

Step1In 1-quart saucepan, heat oil over medium-high heat. Add shallots and brown sugar; cook about 5 minutes to soften shallots, stirring constantly. Reduce heat to medium, and cook until reduced to jam consistency. Stir in vinegar and salt. Transfer to serving bowl.
