Ingredients
- 1 bag (11.8 oz) frozen honey roasted sweet corn
- 1 can (15 oz) black beans, drained, rinsed
- 1/2 cup chopped plum (Roma) tomato (1 small)
- 1 medium jalapeño chile, seeded, finely chopped (about 1 tablespoon)
- 2 tablespoons chopped fresh cilantro
- 2 tablespoons chopped red onion
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 2 tablespoons olive oil
- 1 tablespoon lime juice
- roasted veggie zesty Cheddar tortilla chips, if desired
