Tomato Jam with Whipped Goat Cheese Appetizer

Ingredients

Tomato Jam

  • 1 can (28 oz) Muir Glen™ organic fire roasted diced tomatoes
  • 1/2 cup sugar
  • 2 teaspoons ras el hanout

Whipped Goat Cheese

  • 4 oz chèvre (goat) cheese, softened
  • 2 tablespoons whipping cream
  • 1 teaspoon finely grated lemon peel

Chips, as desired

  • Food Should Taste Good™ chips

Instructions

    In bowl of food processor, add tomatoes. Cover; puree until texture is uniform.

    In 2-quart saucepan, stir pureed tomatoes, sugar and ras el hanout with spoon. Heat to boiling over medium heat; reduce heat. Cook about 30 minutes, stirring occasionally, until very thick.

    In medium bowl, beat goat cheese, cream and lemon peel on medium speed until light and fluffy.

    Serve a dollop of Tomato Jam over a smear of Whipped Goat Cheese on top of a sweet potato chip.
