If you’ve never had matcha and strawberries together, this is your sign. This cake starts with a vanilla cake mix (we love a shortcut), gets a green tea glow-up with matcha powder, and is layered with fluffy baby pink buttercream and fresh strawberries. She’s cute and tastes amazing.

It’s for spring picnics, birthdays, or just “I felt like baking something pretty” moments. Super simple to make, but it looks like you spent hours on it. And yes, chamomile flowers on top are totally optional but highly encouraged.

Matcha Cake

Buttercream Frosting

  • 3 cups unsalted butter, softened
  • 3 cups powdered sugar, sifted
  • 2 teaspoons vanilla extract
  • Pastel pink gel food color from 1 box Betty Crocker™ Pastel Gel Food Color

Decorations

  • 1 1/2 cups fresh strawberries, divided
  • Chamomile flowers, if desired

Instructions

  • Step

    Heat the oven to 350°F. Grease 2 (6-inch) round cake pans and line with parchment paper. Prepare cake batter using cake mix, eggs, water, and oil as directed on cake mix box, adding the matcha powder along with the other cake ingredients. Evenly divide batter between prepared pans. Bake about 40 to 45 minutes or until a toothpick inserted in the center comes out clean. Cool 10 minutes before removing from pan. Cool completely on cooling rack.

    Meanwhile, on medium speed, cream together softened butter, sifted powdered sugar, and vanilla. Mix until fully incorporated and fluffy. Stir in a hint of pink food color to dye the buttercream a baby pink color.

    Chop 3/4 cup of strawberries to use in the middle layer of the cakes, and cut the remaining strawberries in half for decoration.

    Spread a layer of buttercream frosting on top of one cake layer; evenly spread the chopped strawberries on top of the frosting.

    Add the second cake layer, and spread a layer of buttercream around and on top of the cake.

    Place cut strawberries all over the cake for decoration, and add optional chamomile flowers for accents.
