They get topped with even more cheese, for a blanket of cheesiness. Each person gets their own serving of these cuties on their plate to enjoy, so there’s less mess to eat them than with regular sloppy joes (or you can use a fork or eat them with your hands, if you like—we won’t judge).
We love using red bell pepper in the sloppy joe mixture—it cleverly adds flavor while disguising the fact there are veggies in it—perfect for those kiddos that might have an aversion to eating their vegetables. But you can use whatever colored bell pepper, you like. This recipe is a cinch to make, requiring just 9 ingredients and 20 minutes of prep. Pop them into the oven while you gather the rest of the meal, and dinner is a breeze, any night of the week.

Sloppy Joe Muffin Cups

- 3/4 lb ground beef (at least 80% lean)
- 1 cup original sloppy joe sauce (from 15-oz can)
- 1/4 cup chopped red bell pepper
- 1/4 cup chopped green onions
- 1 teaspoon chili powder
- 2 cups Bisquick™ Original Pancake & Baking Mix
- 1 cup shredded Colby-Monterey Jack cheese blend (4 oz)
- 1/2 cup milk
- 1 tablespoon vegetable oil

Step1Heat oven to 450°F. Spray 12 regular-size muffin cups with cooking spray.

Step2In 10-inch nonstick skillet, cook ground beef over medium-high heat 5 to 7 minutes, stirring occasionally, until no longer pink; drain. Add sloppy joe sauce, bell pepper, onions and chili powder. Cook uncovered until mixture comes to boil, about 2 to 3 minutes, stirring occasionally; remove from heat.

Step3In medium bowl, stir Original Bisquick mix, 1/2 cup of the cheese, the milk and vegetable oil until soft dough forms. Form into a ball. Divide dough into 12 pieces. Press each piece in bottom and up sides of a muffin cup. Divide beef mixture among cups (about 1 1/2 tablespoons each).

Step4Bake 8 to 10 minutes or until crust edges are golden brown. Sprinkle with remaining cheese. Bake 1 to 2 minutes longer or until cheese is melted. Let stand 5 minutes. Run knife around edge of cups; carefully remove from pan.
