Skinny Chocolate Chip-Zucchini Cake

Ingredients
- 1 1/4 cups sugar
- 1/3 cup butter or margarine, softened
- 1/3 cup vegetable oil
- 1 teaspoon vanilla
- 2 eggs
- 2 1/2 cups all-purpose flour
- 1/4 cup unsweetened baking cocoa
- 1 teaspoon baking soda
- 1/2 cup buttermilk
- 2 cups shredded zucchini (1 medium)
- 1/3 to 1/2 cup semisweet chocolate chips (2 to 3 oz)
- 1/2 cup chopped nuts, if desired

Step1Heat oven to 350°F. Grease 13x9-inch pan with shortening or cooking spray; lightly flour. In large bowl, beat sugar, butter, oil, vanilla and eggs with spoon until well blended.

Step2Stir in flour, cocoa, baking soda and buttermilk until well combined. Fold in zucchini, chocolate chips and, if desired, nuts. Spread batter evenly in pan.

Step3Bake 35 to 45 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour. If desired, frost cooled cake.
