It’s jalapeño poppers deconstructed to become a delicious all-family skillet dinner. From our Make it In One cookbook, this easy dinner is made in one skillet. From browning the spicy Italian sausage, to simmering the stove-top casserole with pasta, veggies, and jalapeño chiles. Then getting a melty, rich topping from two kinds of cheese, this supper is one you can really sink your teeth into!

We consider this a complete meal—it has protein, veggies, and pasta all in one, meaning you could just serve this dish. It takes the place of having 3 separate foods, one in each of these categories, by making just a single food! It’s hearty and satisfying and cooked in minutes. This cheesy and spicy skillet casserole is easy enough for even a weeknight meal, being ready to enjoy in just 35 minutes.

Ingredients

  • 1 lb bulk Italian pork sausage
  • 1 medium onion, chopped (1/2 cup)
  • 2 cloves garlic, finely chopped
  • 1 large jalapeño chile, seeded, chopped (about 1/4 cup)
  • 2 cups chicken broth (from 32-oz carton)
  • 1 cup uncooked orzo or rosamarina pasta (6 oz)
  • 1 green bell pepper, chopped (1 cup)
  • 1/2 cup shredded Cheddar cheese (2 oz)
  • 4 oz cream cheese, softened, cubed
  • Sliced jalapeño chile, if desired

Instructions

    In 12-inch skillet, cook sausage, onion, garlic and chopped chile over medium-high heat, stirring frequently, 5 to 7 minutes or until sausage is no longer pink; drain.

    Add chicken broth, orzo and bell pepper to sausage in skillet. Heat to boiling over high heat. Reduce heat to low. Cover; cook 10 to 12 minutes or until orzo is tender and liquid is almost evaporated, stirring once during cooking.

    Stir in cheddar cheese and cream cheese. Cook and stir over low heat 3 to 4 minutes or until cheese is melted and mixture is thoroughly heated. Garnish with sliced chile.
