Turmeric is a member of the ginger family and is grown in warm climates in Asia. It's spicy-peppery flavor adds another layer of flavor to these amazing pumpkin bars.

Pumpkin-Turmeric Bars with Coconut Cream Frosting

Ingredients

Bars

  • 1 cup granulated sugar
  • 1 cup canned pumpkin (not pumpkin pie mix)
  • 3/4 cup coconut oil
  • 1/2 cup honey
  • 3 eggs
  • 1 1/2 cups Gold Medal™ all-purpose flour
  • 1 3/4 teaspoons ground turmeric
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Coconut Cream Frosting

  • 1/3 cup plus 2 tablespoons cream of coconut (from 15-oz can)
  • 1 teaspoon vanilla or coconut extract
  • 1/8 teaspoon salt
  • 3 cups powdered sugar
  • Additional ground cinnamon and turmeric, if desired

Instructions

    Heat oven to 350°F. Spray 13x9-inch baking pan with cooking spray.

    In large bowl, beat granulated sugar, pumpkin, coconut oil, honey and eggs with electric mixer on low speed until well blended. Beat in flour, turmeric, baking powder, baking soda, cinnamon and salt on low speed until well mixed (batter may be lumpy). Spread in pan.

    Bake 24 to 28 minutes or until toothpick inserted in center comes out clean. Cool completely in pan on cooling rack, about 1 hour.

    In medium bowl, beat 1/3 cup cream of coconut, the vanilla and salt on medium speed until smooth. Beat in powdered sugar. If frosting is too thick, beat in additional coconut cream, 1 teaspoon at a time, until frosting is smooth spreading consistency. Spread frosting on bars. Sprinkle with additional cinnamon and turmeric. For bars, cut into 8 rows by 5 rows.
