Put a savory spin on traditional waffles with a recipe that turns breakfast into dinner. Original Bisquick mix is the secret shortcut for this intriguing new dish.
Parmesan-Pesto Waffles

Ingredients
- 2 cups Original Bisquick™ mix
- 1/2 cup milk
- 2 tablespoons vegetable oil
- 1 egg
- 1/2 cup freshly grated Parmesan cheese
- 2 tablespoons basil pesto
- 6 eggs
Instructions

Step1Spray waffle maker with cooking spray; heat until hot. In large bowl, stir together Bisquick mix, milk, oil and 1 egg just until combined (don’t overmix). Fold in cheese and pesto.

Step2Pour batter onto center of hot waffle maker. (Check manufacturer’s directions for recommended amount of batter.) Close lid of waffle maker. Bake about 5 minutes or until steaming stops. Carefully remove waffle; cover to keep warm. Repeat with remaining batter.

Step3Meanwhile, fry or poach 6 eggs.

Step4To serve, place 2 waffles on each plate; top with 1 fried egg.
