When it comes to a tailgate-worthy quiche, we don’t mess around. Bake a cheesy egg mixture inside Old El Paso™ taco bowls for a perfectly portable pregame brunch food.

Ingredients

  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped tomato
  • 1/4 cup chopped onion
  • 2 eggs
  • 1/2 cup heavy whipping cream
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 package (5.1 oz) Old El Paso™ Flour Soft Tortilla Mini Bowls (12 Count)
  • 1/4 cup shredded Cheddar cheese (1 oz)

    Heat oven to 350°F. Line cookie sheet with foil.

    In 8-inch nonstick skillet, cook bell pepper, tomato and onion 3 to 5 minutes to soften. In medium bowl, beat eggs, cream, salt and pepper with whisk.

    On ungreased cookie sheet, place boats. Put 2 teaspoons cooked vegetables and 1 teaspoon cheese in bottom of each boat. Pour 1 1/2 tablespoons egg mixture in each boat. Bake 15 to 18 minutes or until knife inserted in center comes out clean.
