Melon Float with Lime and Mint

Ingredients
- 1/2 cup sugar
- 1/3 cup water
- 1 tablespoon chopped fresh mint leaves
- 1 tablespoon grated lime peel
- 1 1/2 cups honeydew melon balls
- 1 1/2 cups cantaloupe balls
- 1 1/2 cups (12 oz) club soda, chilled
Instructions

Step1In 1-quart saucepan, heat sugar, water, mint and lime peel to boiling; reduce heat. Simmer uncovered about 5 minutes or until sugar is dissolved.

Step2In heatproof medium bowl, place honeydew and cantaloupe balls; pour hot syrup through strainer over melon, removing lime peel and mint. Cover; refrigerate at least 1 hour or until chilled.

Step3To serve, divide melon balls and syrup among 4 parfait glasses or dessert dishes. Top with club soda.
