Lentil and Brown Rice Casserole

- 3/4 cup dried lentils (6 ounces), sorted and rinsed
- 1/2 cup uncooked brown rice
- 2 1/2 cups vegetable or chicken broth
- 1 package (16 ounces) frozen cut green beans or broccoli cuts
- 1 cup shredded Cheddar cheese (4 ounces)
Instructions

Step1Heat oven to 375°. Mix lentils, rice and broth in 2-quart casserole. Cover and bake 1 hour.

Step2Stir in frozen green beans. Cover and bake about 30 minutes or until liquid is absorbed and rice is tender. Sprinkle with cheese.
