Homemade lemon buttercream on top of lemon cupcakes is even more delicious when capped off with tangy lemonade marshmallow PEEPS® chicks!

Cupcakes
- 1 box Betty Crocker™ Delights Super Moist™ Lemon Cake Mix
- Water, oil and eggs called for on cake mix box
Lemon Buttercream
- 1 cup butter, softened
- 6 cups powdered sugar
- 4 to 6 tablespoons fresh lemon juice
- 2 to 4 tablespoons milk
Garnish
- Yellow coarse decorating sugar
- 24 PEEPS® sweet lemonade flavored marshmallow chicks
- 24 straws

Step1Heat oven to 375°F. Place paper baking cup in each of 24 regular-size muffin cups. Make cake as directed on box for cupcakes. Cool completely on cooling rack, about 30 minutes.

Step2Meanwhile, make Lemon Buttercream. In large bowl, beat butter with electric mixer on medium speed until smooth. Add powdered sugar, 4 tablespoons of the lemon juice and 2 tablespoons of the milk. Beat until smooth, adding more lemon juice and milk as necessary to reach a smooth, spreadable consistency.

Step3Spoon buttercream into decorating bag fitted with large open star tip. Pipe frosting on cupcakes. Top each cupcake with coarse decorating sugar and a PEEPS® chick. Cut about 4 inches off bottom of each straw; discard. Poke straw into each cupcake.
