Gluten-Free Buffalo Chicken Pancake Tacos

Pancakes

Filling

  • 3 cups shredded gluten-free rotisserie chicken
  • 2/3 cup gluten-free buffalo wing sauce
  • 3/4 cup frozen roasted corn, cooked and drained
  • 1 ripe avocado, peeled and chopped
  • 3/4 cup gluten-free blue cheese or ranch dressing

Instructions

    Heat griddle or skillet over medium heat (350°F). Brush with vegetable oil, if necessary.

    In large bowl, mix pancake ingredients with whisk until blended.

    For each pancake, pour about 1/4 cup batter onto hot griddle. Cook 1 to 2 minutes or until edges are dry and bubbles begin to form on top. Turn; cook until golden brown. Place on heatproof plate and cover to keep warm until ready to serve.

    In medium microwavable bowl, stir together shredded chicken and wing sauce. Cover; microwave on High 1 to 2 minutes or until hot, stirring once during cooking.

    To assemble each taco, place 1/4 cup buffalo chicken in center of warm pancake. Top with 1 tablespoon of the corn and about 2 tablespoons of the avocado. Drizzle with 1 tablespoon of the blue cheese dressing. Repeat with remaining pancakes and filling.
