Gluten-Free Buffalo Chicken Pancake Tacos

Ingredients
Pancakes
- 1 1/2 cups Gluten Free Bisquick Pancake and Baking Mix
- 1 1/2 cups milk
- 3 tablespoons vegetable oil
- 2 tablespoons gluten-free ranch dressing mix (dry)
- 2 eggs
Filling
- 3 cups shredded gluten-free rotisserie chicken
- 2/3 cup gluten-free buffalo wing sauce
- 3/4 cup frozen roasted corn, cooked and drained
- 1 ripe avocado, peeled and chopped
- 3/4 cup gluten-free blue cheese or ranch dressing
Instructions

Step1Heat griddle or skillet over medium heat (350°F). Brush with vegetable oil, if necessary.

Step2In large bowl, mix pancake ingredients with whisk until blended.

Step3For each pancake, pour about 1/4 cup batter onto hot griddle. Cook 1 to 2 minutes or until edges are dry and bubbles begin to form on top. Turn; cook until golden brown. Place on heatproof plate and cover to keep warm until ready to serve.

Step4In medium microwavable bowl, stir together shredded chicken and wing sauce. Cover; microwave on High 1 to 2 minutes or until hot, stirring once during cooking.

Step5To assemble each taco, place 1/4 cup buffalo chicken in center of warm pancake. Top with 1 tablespoon of the corn and about 2 tablespoons of the avocado. Drizzle with 1 tablespoon of the blue cheese dressing. Repeat with remaining pancakes and filling.
