Spicy, snappy radishes complement fresh sweet corn in this recipe that makes the most of a bountiful summer harvest.
Fresh Corn and Radish Salad

Ingredients
- 4 cups fresh whole kernel corn
- 1/2 cup sliced radishes
- 1 shallot, finely chopped
- 1 teaspoon chopped fresh thyme leaves
- 3 tablespoons fresh lime juice
- 2 tablespoons olive oil
- 1 teaspoon agave nectar or honey
Instructions

Step1In medium bowl, mix corn, radishes, shallot and thyme.

Step2In small bowl, stir lime juice, oil and agave nectar with whisk until blended. Just before serving, pour dressing over salad and toss to coat.
