Feta and Spinach-Stuffed Bread

Ingredients

  • 1/2 loaf French bread (8 oz)
  • 1 1/2 oz thinly sliced prosciutto (from 3-oz package), cut crosswise into ¼-inch strips
  • 1 cup shredded mozzarella cheese (4 oz)
  • 1/3 cup chopped red bell pepper
  • 1/2 cup chopped fresh baby spinach leaves
  • 1/2 teaspoon garlic powder
  • 1 package (4 oz) crumbled feta cheese
  • 2 oz cream cheese, softened (from 8-oz package)
  • 1/3 cup shredded Parmesan cheese

    Heat oven to 350 F. Line large cookie sheet with cooking parchment paper.

    In 10-inch nonstick skillet, cook prosciutto over medium-high heat, stirring occasionally, 4 to 5 minutes or until crisp.

    Place bread on cookie sheet. Using a serrated knife, carefully hollow out bread by cutting a 3 inch wide V-shape lengthwise down center of loaf to within 1/2 inch of bottom.

    In medium bowl, stir in prosciutto and remaining ingredients except Parmesan cheese until well mixed. Spoon cheese mixture in hollowed out loaf; sprinkle with Parmesan cheese.

    Bake 20 to 22 minutes or until filling is hot and cheese is melted.

    Cool 5 minutes. Cut into slices and serve warm.
