Fattoush is a Middle Eastern bread salad full of fresh vegetables and herbs in a light citrus dressing. Our spin adds the toasted pita at the last minute so the bread doesn't get soggy.

Ingredients
- 3/4 cup lemon juice
- 1/4 cup olive oil
- 1/4 teaspoon salt
- 1/2 teaspoon pepper
- 4 cloves garlic, finely chopped
- 1 cup diced unpeeled English (seedless) cucumber
- 3 plum (Roma) tomatoes, diced (1 3/4 cups)
- 1/2 red bell pepper, diced (1/2 cup)
- 3 cups thinly sliced red cabbage
- 1/2 cup chopped fresh Italian (flat-leaf) parsley
- 1/4 cup chopped fresh mint leaves
- 2 pita rounds, toasted and torn into 1-inch chunks

Step1In large bowl, beat lemon juice, oil, salt, pepper and garlic with whisk. Add remaining ingredients except pita; toss well to combine.
