- 1 pound halibut or other mild-flavored fish steaks
- 1/2 cup apricot preserves
- 2 tablespoons white vinegar
- 1 1/2 teaspoons chopped fresh or 1/2 teaspoon dried tarragon leaves

Step1Set oven control to broil. Spray broiler pan rack with cooking spray. Place fish on rack in broiler pan. Broil with tops about 4 inches from eat 4 minutes; turn. Broil about 4 minutes longer or until fish flakes easily with fork. Meanwhile, mix preserves, vinegar and tarragon ; spoon onto fish. Broil 1 minute longer.
