Extra-Easy Pad Thai-Style Chicken

Ingredients
- 1 tablespoon vegetable oil
- 1 lb uncooked chicken breast tenders (not breaded), cut in half crosswise
- 2 eggs, beaten
- 2 cups water
- 2 packages (3 oz each) chili-flavor ramen noodles
- 1/4 cup lime juice
- 4 medium green onions, sliced (1/4 cup)
- 1/2 cup chopped salted peanuts
- 4 teaspoons chopped fresh cilantro

Step1In 12-inch nonstick skillet, heat oil over medium-high heat. Cook chicken in oil 4 to 5 minutes, stirring frequently, until browned. Stir in eggs. Cook 2 to 3 minutes, stirring occasionally, until eggs are firm.

Step2Stir in water, noodles with contents of seasoning packets and lime juice. Cover; cook 5 minutes, stirring once or twice to separate noodles.

Step3Stir to mix all ingredients; spoon onto serving plates. Sprinkle with onions, peanuts and cilantro.
