Ingredients
- 1 pound ground pork
- 1 clove garlic, finely chopped
- 1/2 cup mayonnaise or salad dressing
- 1/2 cup plain yogurt
- 1/4 cup frozen (thawed) orange juice concentrate
- 2 1/2 teaspoons curry powder
- 1 can (8 ounces) pineapple chunks in juice, drained and 2 tablespoons juice reserved
- 4 medium green onions, sliced (1/4 cup)
- 2 cups uncooked farfalle (bow-tie) pasta (4 ounces)
- 1 small red bell pepper, cut into 1-inch pieces
- 1 can (11 ounces) mandarin orange segments, drained
- 1/4 cup coconut, toasted*
Instructions

Step1Cook pork and garlic in 10-inch skillet over medium-high heat, stirring occasionally, until pork is no longer pink; drain. Stir in mayonnaise, yogurt, juice concentrate, curry powder and reserved pineapple juice. Stir in pineapple and onions. Cook, stirring frequently, until hot.

Step2Cook and drain pasta as directed on package, adding bell pepper for the last 4 minutes of cooking. Toss pasta, bell pepper and pork mixture. Toss with orange segments. Sprinkle with coconut.
