  • 3/4 cup granulated sugar
  • 1/2 cup orange juice
  • 1/2 cup water
  • 12 oz fresh cranberries, rinsed
  • Pinch of salt
  • 1 stick cinnamon
  • 1 piece of orange peel (use a vegetable peeler or paring knife)

Instructions

    Combine granulated sugar, orange juice, and water in a large saucepan over medium heat, stirring to combine. Add cranberries, salt, cinnamon stick and orange peel; bring to a simmer over medium heat, stirring frequently. Continue cooking, 10-15 minutes, until the cranberries have popped and juice has thickened. Let cool for at least 30 minutes.

    Meanwhile, beat 3 eggs until thick and lemon colored. Add cake mix, water, and oil and beat to combine. Spread on a greased and parchment lined jelly roll pan (about 9x10x1-inch), and bake just until the cake springs back when touched, 10-14 minutes.

    Immediately loosen the cake from the sides of the pan and turn upside down onto a towel generously sprinkled with powdered sugar. Carefully remove pan and paper. While the cake is hot, carefully roll up the cake and towel from the narrow end. Cool on the cooling rack for at least 30 minutes.

    Unroll the cake and remove the towel. Spread the cranberry sauce over the cake. Roll up cake. Sprinkle it with powdered sugar, and decorate with cranberries and mint leaves.
