Ingredients
- 4 chicken drumsticks (about 1 pound)
- 4 chicken thighs (about 1 pound)
- 1 medium mango, peeled, pitted and cubed (1 cup)
- 1 tablespoon grated gingerroot
- 1 teaspoon finely shredded lime peel
- 2 tablespoons lime juice
- 1/2 teaspoon salt
- 2 medium green onions, thinly sliced (2 tablespoons)
- 1 clove garlic, finely chopped
- 2 cans (15 ounces each) black beans, undrained

Step1Heat oven to 375°.

Step2Place chicken pieces, skin sides up, in ungreased rectangular baking dish, 13x9x2 inches. Bake uncovered 40 minutes. Drain excess fat from baking dish.

Step3Mix remaining ingredients; spoon over and around chicken pieces. Cover and bake about 30 minutes or until juice of chicken is no longer pink when centers of thickest pieces are cut.
