Buffalo Chicken Penne Pasta

Ingredients
- 2 stalks celery, chopped (2/3 cup)
- 1 tablespoon vegetable oil
- 1 package (10 oz) fully-cooked chicken bratwurst or sausage, cut into 1/2-inch slices
- 1 medium onion, chopped (1/2 cup)
- 1 container (32 oz) reduced-sodium chicken broth
- 1/3 cup buffalo wing sauce
- 8 oz uncooked penne pasta (2 1/2 cups)
- 3/4 cup frozen sweet peas
- 4 oz cream cheese, cubed
- 1/2 cup shredded Monterey Jack cheese (2 oz)
- 1/3 cup crumbled blue cheese
- 2 medium green onions, thinly sliced

Step1Reserve 2 tablespoons chopped celery; set aside. In 5-quart Dutch oven, heat oil over medium-high heat; add chicken bratwurst, onion and remaining celery. Cook 4 to 6 minutes, stirring occasionally, until bratwurst is browned and vegetables are tender. Spoon bratwurst mixture into medium bowl.

Step2Add chicken broth, buffalo wing sauce and pasta to Dutch oven. Heat to boiling; reduce heat. Simmer uncovered 13 to 15 minutes, stirring frequently, until pasta is tender and most of the liquid is absorbed.

Step3Add peas, cream cheese and Monterey Jack cheese, stirring constantly, until cheese is melted. Add bratwurst mixture back to Dutch oven, stirring frequently, until thoroughly heated. Top with reserved celery, blue cheese and green onions.
