Buffalo Chicken Penne Pasta

If your family loves buffalo chicken, then you’re going to adore this new twist. Made on your stove top and all in one pan means it’s not only easy to prep, but also clean up! That’s a triple-win in our book. Penne pasta is cooked in chicken broth and buffalo wing sauce, to infuse it with that spicy flavor we all crave. It also cleverly becomes the buffalo-flavored sauce for the casserole by adding cream cheese and shredded Monterey Jack cheeses.

Fully-cooked slices of flavorful and juicy chicken bratwurst give buffalo chicken a flavor upgrade and cleverly keeps the prep of this recipe to just 45 minutes. And as if that wasn’t delicious enough already, this savory pasta and chicken bratwurst dish goes the extra mile with a topping of crumbled blue cheese, chopped crunchy celery, and green onions, for full-on buffalo flavor. This dinner might just become one for regular rotation.

Buffalo Chicken Penne Pasta

Ingredients

  • 2 stalks celery, chopped (2/3 cup)
  • 1 tablespoon vegetable oil
  • 1 package (10 oz) fully-cooked chicken bratwurst or sausage, cut into 1/2-inch slices
  • 1 medium onion, chopped (1/2 cup)
  • 1 container (32 oz) reduced-sodium chicken broth
  • 1/3 cup buffalo wing sauce
  • 8 oz uncooked penne pasta (2 1/2 cups)
  • 3/4 cup frozen sweet peas
  • 4 oz cream cheese, cubed
  • 1/2 cup shredded Monterey Jack cheese (2 oz)
  • 1/3 cup crumbled blue cheese
  • 2 medium green onions, thinly sliced

Instructions

    Reserve 2 tablespoons chopped celery; set aside. In 5-quart Dutch oven, heat oil over medium-high heat; add chicken bratwurst, onion and remaining celery. Cook 4 to 6 minutes, stirring occasionally, until bratwurst is browned and vegetables are tender. Spoon bratwurst mixture into medium bowl.

    Add chicken broth, buffalo wing sauce and pasta to Dutch oven. Heat to boiling; reduce heat. Simmer uncovered 13 to 15 minutes, stirring frequently, until pasta is tender and most of the liquid is absorbed.

    Add peas, cream cheese and Monterey Jack cheese, stirring constantly, until cheese is melted. Add bratwurst mixture back to Dutch oven, stirring frequently, until thoroughly heated. Top with reserved celery, blue cheese and green onions.
