Like a tropical cocktail in a fun-to-eat cookie, this dessert comes together in a flash with Betty Crocker sugar cookie mix.
Boozy Coconut-Lime Cookies

Ingredients
Cookies
- 1 pouch (17.5 oz) Betty Crocker™ Sugar Cookie Mix
- 1/2 cup coconut oil
- 3 tablespoons rum
- 1 egg
- Grated peel from 2 limes (about 2 teaspoons)
Glaze
- 1/2 cup powdered sugar
- 1 teaspoon fresh lime juice
- 2 teaspoons rum
Instructions

Step1Heat oven to 375°F. Line cookie sheets with cooking parchment paper.

Step2In medium bowl, stir together Cookie ingredients until soft dough forms.

Step3Drop dough by rounded teaspoonfuls 2 inches apart onto cookie sheets.

Step4Bake 7 to 9 minutes or until edges are light brown. Remove from cookie sheets to cooling racks.

Step5While cookies are cooling, in small bowl, beat Glaze ingredients with whisk until smooth.

Step6Brush light coating of glaze over each cookie. Let stand until glaze is dry and hard.
