We've taken the flavors of the popular black and blue burgers, found on many restaurant menus, and made them into personal-sized meatloaves! Hailing from our Betty Crocker Right-Size Recipes cooking for 2 cookbook, these mini meatloaves may be small, but don't let their size fool you. They are perfectly portioned in size and bursting with blue cheese and black pepper flavor.

Ingredients

Loaves

  • 1/2 lb lean (at least 80%) ground beef
  • 1/3 cup Progresso™ Plain Panko Crispy Bread Crumbs
  • 1/4 cup crumbled blue cheese (1 oz)
  • 2 tablespoons sliced green onions (2 medium)
  • 1 tablespoon chopped fresh Italian (flat-leaf) parsley
  • 1 tablespoon milk
  • 2 teaspoons Dijon mustard
  • 1/2 teaspoon seasoned pepper
  • 1 egg

Toppings

  • Crumbled blue cheese, if desired
  • Sliced green onions, if desired

Instructions

  • Step

    Heat oven to 350°F. In medium bowl, mix all ingredients except toppings. Shape mixture into 2 small (4x2-inch) loaves. Place in 2 ungreased 4 1/2x 2 1/2-inch loaf pans.

    Bake uncovered 30 to 35 minutes or until no longer pink in center of loaves and thermometer reads 160°F when inserted in center of loaves.

    Let stand 5 minutes; remove from pans. Garnish with Toppings.
