  • 1/2 lb lean ground beef (at least 80%)
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • Baby arugula or spinach leaves, if desired

    2
In 12-inch nonstick skillet, heat 1 tablespoon of the oil over medium-high heat. Add mushroom and onion mixture; cook, stirring occasionally, 4 to 6 minutes or until most of the liquid is gone. Spoon into medium heatproof bowl; cool 10 minutes.
  • Step
    3
Add ground beef, salt and pepper to cooked mushroom mixture; mix well. Press mixture evenly into 4 patties, about 1/2-inch thick.
  • Step
    4
In same skillet, heat remaining 2 teaspoons oil over medium-high heat until hot. Place patties in pan; press down with spatula until they are each 1/4-inch thick. Cook 4 minutes; carefully turn and cook 2 to 4 minutes longer, until no longer pink in center and crust forms around edges. Place patties on bun bottoms; spread with mayonnaise. Top with arugula, coarsely-ground pepper and bun tops.
