Here's a quick and super yummy mac and cheese bowl you can make in the microwave that's just for you. From our Betty Crocker Snacks cookbook, this one-serving recipe is a keeper for when those cravings hit!

Bacon Mac and Cheese Bowl

Ingredients

  • 3/4 cup water
  • 1 cup (from 16-oz box) uncooked rotini pasta
  • 1 cup shredded American cheese (4 oz)
  • 2 slices crisply cooked bacon, crumbled
  • 1/4 cup shredded Parmesan cheese (1 oz)
  • 2 tablespoons milk
  • 1/8 teaspoon pepper

Instructions

    In 2 1/2-cup shallow microwavable serving bowl, microwave water uncovered on High 1 minute. Stir in pasta; cover with waxed paper. Microwave on High 7 to 8 minutes, stirring every 2 minutes until pasta is tender. Add 1 to 2 tablespoons water and microwave an additional minute, if necessary, until pasta is tender.

    Set aside 1 tablespoon of the shredded American cheese and 1 tablespoon of the crumbled bacon; set aside. Stir remaining ingredients into pasta in bowl. Microwave uncovered on High 40 to 60 seconds, stirring halfway through, until cheese is melted. Top with reserved crumbled bacon and American cheese.
