Monster Cookie Ice Cream Sandwiches

Peanut butter, chocolate, raisins and oatmeal cookies come together in this delicious summer treat.

Growing up, one of the simplest pleasures of summer was enjoying a melty ice cream sandwich on the front stoop of my house. Besides the sound of a baseball game or the smell of food on the grill, ice cream sandwiches are the best way I can transport myself back to those long, lazy adolescent summer days. But it never occurred to me that I could recreate those happy memories at home any time of year, and in such an easy way, to boot!

Enter these monster cookie ice cream sandwiches. It’s the 2.0 version of the ice-cream truck ice cream sandwich. Sandwich two oatmeal raisin cookies with a “monster”-inspired flavored ice cream (vanilla ice cream swirled with peanut butter, chocolate candies and chocolate chips) and you can have the taste of summer in your home all year round.

First, make sure you have all the ingredients needed ahead of time (the last thing you want is melted ice cream everywhere because you forgot an ingredient!).

Make the oatmeal cookie dough, adding in a handful of raisins if desired.

Bake the cookies as directed, then let cool completely.

Meanwhile, mix together the vanilla ice cream, peanut butter, chocolate chips and chocolate candies. Return the ice cream to the freezer in case it’s melted or softened a bit during the stirring. You want the ice cream as firm as possible when you assemble the sandwiches.

Once the cookies have cooled, and the ice cream has firmed up, top half of the cookies with a scoop of ice cream, then top with another cookie to make a sandwich. Roll the cookies in more chocolate chips or chocolate candies and then return them to the freezer to set.

Ingredients

    • 1pouch (17.5 oz) Betty Crocker™ Oatmeal Cookie Mix
    • 1/2cup butter, softened
    • 1tablespoon water
    • 1egg
    • 1/2cup raisins
    • 3cups vanilla ice cream
    • 1/4cup M&M's® chocolate candies
    • 1/4cup semisweet chocolate chips
    • 3tablespoons creamy peanut butter

Directions

  • 1In medium bowl, stir together ice cream, chocolate candies, chocolate chips and peanut butter. Freeze until firm, about 1 hour.
  • 2Meanwhile, heat oven to 375°F (350°F for dark or nonstick cookie sheets). In large bowl, combine cookie mix, butter, water and egg; stir just until combined. Stir in raisins.
  • 3Drop dough by rounded tablespoonfuls onto ungreased cookie sheets.
  • 4Bake 11 to 13 minutes or until light golden brown. Cool 1 minute on cookie sheets. Transfer cookies to cooling racks; cool completely, about 30 minutes.
  • 5Onto bottom side of half of the cooled cookies, place scant scoop of ice cream mixture. Top with another cookie, bottom side down. Place sandwich cookies on cookie sheet. Freeze until firm, about 1 hour, before serving.
