Brown Butter Chai Blondies

Updated January 11, 2024

Looking for a new shareable dessert to bring to your next gathering? Spice things up with this easy twist on Betty’s Chewy Chai-Spiced Blondies from Maker Haley Williams.

Made with Betty Crocker™ Yellow Cake Mix, Haley’s easy Brown Butter Chai Blondies bake up soft and tender. Fragrant chai spices give the bars a wonderfully warm spiced flavor that’s perfect for winter. To add another layer of decadence, Haley browns the butter before adding it to the batter. Browning the butter cooks out any water and brings out an intensely rich, nutty flavor to complement the chai. A drizzle of white chocolate on top makes the bars look extra fancy—the perfect finishing touch.

These Brown Butter Chai Blondies are a wonderful way to bring a little coziness to your kitchen this winter. Serve them with a hot cup of tea, or bake a batch for the kids to enjoy after school with a cold glass of milk. Either way, these rich, chewy bars are a must-try this season!

Haley’s Tips

  • Start with 14 tablespoons of butter before browning. The browning process will make the water in the butter evaporate, reducing the total amount to 12 tablespoons (or ¾ cup).
  • As soon as the butter has a nutty aroma and you see brown specks, take the pan off the heat and immediately transfer the melted butter to a bowl to start cooling. If it stays in the hot pan, it’s at risk of burning.
  • Check that your spices are fresh and not expired! This will guarantee a stronger chai flavor.
