My family loves pancakes, but sometimes those fluffy sweet stacks can be a little predictable, so I’m always trying to figure out new ways to serve their favorite meal. These handheld pancake tacos seem to thrill everyone the moment they hit the table. Filled with a yogurt-whipped cream mixture and colorful fresh fruit, they taste absolutely wonderful.
To get started, gather all of your ingredients.
In a medium bowl, combine the Bisquick, sugar and baking soda. In a separate bowl, whisk together the yogurt, milk and egg. Add the dry ingredients to the wet and whisk until combined. The batter will be lumpy.
To make your pancakes, pour 1/3 cup of batter onto a hot greased skillet. Cook until the edges are dry and bubbles start to form on the surface. Flip and cook on the other side for an additional 2 minutes. Repeat with remaining batter until all of your pancake shells have been made.
Next, beat the heavy whipping cream with a mixer until soft peaks form. Then, add the yogurt and beat again until stiff peaks form. Once all of your fillings and fixings are ready, set them out on the table buffet style, this way everyone can build their own fruity pancake taco as they’d like.
To build a fruity pancake taco, spoon some of the yogurt-whipped cream mixture into the center of each pancake, then fill with different fruits and berries. Fold the pancake in half and eat just like a taco.

4To serve, spoon whipped cream mixture on center of each pancake. Top with fresh fruit. Fold pancakes in half, and serve like tacos.
