How to Make Corn Dog Muffins

By Stephanie Wise
Created January 10, 2017
The delicious flavor of corn dogs is baked into fun, can't-miss muffins. How easy is that?

I don’t know about you, but summer is my favorite time of year. Swimming in the sunshine, late-night bonfires, baseball games, county fairs. There is no better way to celebrate the season.

And the food? Well, if I could eat summertime fare every day of my life, I’d be one happy gal.

Luckily, I don’t have to wait for warm weather to show up to make a classic festival food in my own kitchen– and with half the effort! These yummy Corn Dog Muffins are a great way to kick off the summer (or any season), and they taste just like the real thing.

Here’s how to make them. First, gather your ingredients and preheat the oven. Measure out the milk and melted butter, cut the hot dogs into smaller pieces and place baking cups in a muffin pan.

Mix up the batter and spoon a couple of tablespoons into each baking cup.

Place a hot dog log in the center of each cup. Don’t they already look cute?

Now top those hot dog logs with more batter, bake ‘em up, then let ‘em cool. See? They look just like regular cornbread muffins.

But there’s a special surprise inside!

This sweet and savory recipe is one easy way to bring the taste of summer into your home anytime of the year.

Corn Dog Muffins

Ingredients

    • 2pouches (6.5 oz) Betty Crocker™ Cornbread & Muffin Mix
    • 2/3cup milk
    • 1/4cup butter or margarine, melted
    • 2eggs
    • 3hot dogs

Directions

  • 1Heat oven to 400°F (375°F for dark or nonstick pan). Place paper baking cup in each of 12 regular-size muffin cups.
  • 2In large bowl, stir together muffin mix, milk, butter and eggs until just moistened (batter will be slightly lumpy). Cut each hot dog crosswise into 4 pieces.
  • 3Spoon 2 tablespoons batter into each muffin cup. Place 1 hot dog piece horizontally in center of each cup (don’t let hot dog touch edges of cup). Spoon 2 more tablespoons batter over hot dog in each cup, making sure hot dog is completely covered.
  • 4Bake 16 to 18 minutes or until golden brown. Remove from pan to cooling rack; cool 10 minutes before serving.
