Ice Cream Wafflewiches

My favorite harbinger of summertime is my family’s first trip to Dairy Dan, our local drive-up, soft-serve ice-cream heaven. As soon as the snow starts to melt and the spring rains drench our Michigan landscape, I get the itch. And when those first flowers pop, the bees start buzzing, and the birds begin chirping, I know it’s time. 

My hands-down first choice at Dairy Dan’s is a waffle cone, twist, coated in sprinkles. It’s a treat that screams summer, and I can't help but get excited when there's ice cream and sprinkles and crisp waffle cones involved. While I'd love to be able to pull myself a soft-serve waffle cone on the daily, I'm not equipped for that (not to mention the fact that that would be DANGER), but I do have a waffle maker and an ice cream scoop. 

And so, I channeled the flavors my favorite summer cone into these super fun and easy-to-make Ice Cream Wafflewiches. The waffles are sweet and tender, key for successful ice cream sandwich-ery. We also have a dead simple, 2-ingredient, chocolate shell for dipping, perfect for snagging those sprinkles, crushed cookies, nuts or whatever dippin’s your heart desires. 

So, without further ado, let’s get this party started! First, we mix together some Bisquick, sugar, an egg, milk, oil and vanilla.

Next, cook those waffles! Heat your waffle iron and scoop some batter up on it, cook ‘til appropriately browned, then repeat.

Next, gather your toppings! The chocolate shell is a super simple mix of melted chocolate and just a little bit of coconut oil.

Dip and sprinkle!

Then it’s time to scoop the ice cream. I think more than one flavor is fun, so definitely have options on hand. Place a big scoop on one waffle, find it a friend and smash ‘em together. True love!

Ingredients

  • Waffles
    • 1 1/2cups Original Bisquick™ mix
    • 1/4cup sugar
    • 2/3cup milk
    • 1egg
    • 2tablespoons canola oil
    • 1teaspoon vanilla
  • Coating
    • 1cup semisweet chocolate chips (6 oz)
    • 1tablespoon coconut oil
  • Filling and Garnish
    • Ice cream
    • Toppings such as candy sprinkles or chopped nuts

Directions

  • 1Heat waffle maker according to manufacturers’ instructions. Line cookie sheet with cooking parchment paper.
  • 2In medium bowl, stir together Bisquick mix and sugar. In 1-cup glass measuring cup, beat milk and egg with small whisk until well combined. Beat in canola oil and vanilla.
  • 3Spray waffle maker lightly with canola or olive oil cooking spray. Scoop about 1/4 cup batter into center of each waffle maker section; close lid. Bake until done (many waffle makers have a light or beep to alert you). Repeat with remaining batter. Cool waffles to room temperature. Place waffles on cookie sheet; freeze 15 to 30 minutes or until waffles and cookie sheet are cold.
  • 4Meanwhile, in medium microwavable bowl, microwave chocolate chips on High 30 seconds. Stir; repeat in 10-second increments until chocolate is melted. Stir in coconut oil. Place candy sprinkles and other desired toppings in shallow bowls or dishes.
  • 5Remove waffles from freezer. Dip each in chocolate; shake off excess. Dip or sprinkle with toppings; return to cold cookie sheet. Before coating hardens completely, move dipped waffle to sheet of cooking parchment paper or another spot to prevent pooling. Repeat with remaining waffles.
  • 6If necessary, place waffles in freezer to speed up hardening of chocolate. Once chocolate is hard, generously scoop ice cream on 1 waffle; top with second waffle to form sandwich. Serve immediately, or wrap and freeze for serving later.
