Turkey-Baked Potato Soup

Ingredients
- 5 slices bacon
- 1 medium sweet onion, chopped
- 2 carrots, chopped
- 3 cloves garlic, finely chopped
- 7 cups turkey or chicken broth
- 2 baked potatoes, chopped
- 3 cups shredded cooked turkey or chicken
- 1 can (15 oz) great northern beans, drained, rinsed
- 2 teaspoons ground coriander
- 1/2 teaspoon salt
- 1/2 teaspoon crushed red pepper flakes
- 1/4 teaspoon freshly ground pepper
- Chopped fresh cilantro or parsley, if desired

Step1In 10-inch skillet, cook bacon until crisp; drain on paper towels, reserving 2 tablespoons drippings in skillet. Crumble bacon; set aside.

Step2Cook onion, carrots and garlic in hot drippings 6 minutes, stirring frequently, until tender. Stir in remaining ingredients except cilantro. Heat to boiling; reduce heat. Cover; simmer 10 minutes. Stir in crumbled bacon. Garnish individual servings with cilantro.
