Taco Cheesy Tots and Hot Dog Casserole

Here's a great quick-and-easy meal the kids are sure to love! When hot dogs and tots team up, who can resist? From our Betty Crocker Make It In One cookbook, this hearty family-favorite is sure to be a hit.

Taco Cheesy Tots and Hot Dog Casserole

Ingredients

  • 1 lb lean (at least 80%) ground beef
  • 1 large onion, chopped (1 cup)
  • 1 package (1 oz) Old El Paso™ 25% Less Sodium taco seasoning mix
  • 1 can (14.5 oz) Muir Glen™ organic diced tomatoes with green chiles, undrained
  • 3 hot dogs, cut in half lengthwise then crosswise into 1/2-inch pieces
  • 1 can (10 1/2 oz) condensed cream of onion soup
  • 1 package (8 oz) shredded Mexican cheese blend
  • 1 package (28 oz) frozen miniature potato nuggets
  • Chopped cilantro and sliced green onions, if desired

Instructions

    Heat oven to 350°F. Spray 13×9-inch (3-quart) glass baking dish with cooking spray. In 12-inch nonstick skillet, cook beef and onion over medium-high heat 7 to 9 minutes, stirring frequently, until brown. Drain. Reduce heat to medium.

    Stir in 2 tablespoons of the taco seasoning mix, the tomatoes and hot dogs. Cook and stir until thoroughly heated. Stir in soup and 1 cup of the shredded cheese until melted.

    Place half (about 3 1/2 cups) of the frozen potatoes in single layer in baking dish; spoon beef mixture on top. In large resealable food storage plastic bag, combine remaining potatoes and remaining taco seasoning mix; seal bag and shake to coat. Arrange seasoned potatoes on top of casserole (discard any remaining taco seasoning mix left in bag.)

    Bake uncovered 40 minutes. Top casserole with remaining 1 cup cheese. Bake 3 to 5 minutes or until cheese is melted and potatoes are lightly browned. Top with cilantro and green onions.
