Succotash with Smoked Ham and Herbs

Ingredients
- 2 boxes (9 oz each) frozen baby lima beans
- 2 tablespoons butter
- 6 oz smoked ham, coarsely chopped (about 1 1/2 cups)
- 1 small red bell pepper, chopped (1/2 cup)
- 1/3 cup finely chopped shallots
- 1 bag (1 lb) frozen baby gold and white corn, thawed
- 2 teaspoons sugar
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground pepper
- 1 cup whipping cream
- 1 tablespoon finely chopped fresh chives
- 1 tablespoon finely chopped fresh parsley
- 1 tablespoon finely chopped fresh tarragon leaves

Step1Cook lima beans in microwave as directed on package; drain.

Step2Meanwhile, in 12-inch skillet, melt butter over medium-high heat. Cook ham in butter 3 minutes, stirring frequently, until lightly browned. Add bell pepper and shallots; cook 3 minutes or just until tender.

Step3Add lima beans, corn, sugar, salt and pepper. Cook 6 minutes, stirring frequently. Add cream; cook 10 minutes, stirring occasionally, until vegetables are tender and cream is slightly thickened. Stir in chives, parsley and tarragon.
