Spicy Watermelon Gaazpacho

Ingredients
- 2 cups coarsely chopped tomatoes
- 2 cups cubed fresh watermelon
- 2 fresh red Thai chile peppers, seeded
- 1/4 cup chopped red onion
- 1 tablespoon lime juice
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1/4 cup extra-virgin olive oil
- 1/4 cup shredded fresh basil leaves
Instructions

Step1In blender, place first 4 ingredients. Cover; blend until thoroughly pureed.

Step2Add remaining ingredients except basil. Cover; blend to combine. Refrigerate until chilled, about 2 hours or until serving time.

Step3Divide evenly among 4 bowls. Top with basil leaves.
