Fritters
- 3 cups butternut squash spirals, coarsely chopped (about 10 oz)
- 2 green onions, chopped
- 1/2 teaspoon finely chopped gingerroot
- 1/4 cup Gold Medal™ All Purpose Flour
- 1/2 teaspoon ground coriander
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon ground red pepper (cayenne)
- 1/4 teaspoon baking powder
- 1 egg, slightly beaten
- 1 cup vegetable oil
Topping
- 1 container (5.3 oz) YQ by Yoplait™ plain
- 1 teaspoon lime juice
- 1/2 teaspoon honey
- 1/8 teaspoon salt
- 2 tablespoons chopped green onions

Step1In large bowl, mix all Fritter ingredients except oil; stir to completely blend.

Step2In 10-inch skillet, heat oil over medium-high heat until hot. Working in batches, scoop 1/4 cup of the squash mixture into oil, and flatten slightly. Repeat to fill skillet. Cook 2 to 3 minutes on each side, turning once, until deep golden brown. If browning too fast, reduce heat to medium. Transfer to paper towel-lined plate. Repeat to use up mixture.

Step3Meanwhile, in small bowl, mix YQ, lime juice, honey and salt; stir to blend into topping.

Step4Top fritters with topping and green onions. Serve immediately.
