There’s a reason you find tiramisu on so many dessert menus. With a combination of creamy mascarpone, spongy ladyfingers, rich espresso, and a touch of cocoa, it remains a beloved classic. We’ve dialed up the chocolate and coffee flavors here for an indulgent treat that’s easy to prepare. Just like traditional tiramisu, these Soft Baked Tiramisu Cookies are the perfect pick-me-up to indulge in over coffee. The cookies are doubly infused with espresso, featuring instant espresso powder in both the rich chocolate cookie base and the silky mascarpone frosting.

Frosting

  • 1 container (8 oz) cold mascarpone cheese
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon espresso powder
  • Pinch of salt
  • 1 cup cold heavy whipping cream
  • Cocoa powder or grated chocolate to garnish

Instructions

    Heat the oven to 350°F. Line two rimmed baking sheets with cooking parchment paper; set aside.

    Mix the cookie mix, butter, eggs, and water according to the package instructions, adding the 1 teaspoon espresso powder along with the other ingredients.

    Scoop the dough into about 2 tablespoon-size portions, and roll into balls. Place 6 dough balls on each prepared baking sheet, leaving space between the cookies for spreading. You will need to bake in batches, so set the remaining dough portions to the side while the first batches bake.

    Bake for 15 minutes. Cool the cookies for about 5 minutes before transferring them to a cooling rack. Repeat with remaining dough. Let cookies cool completely before frosting.

    Meanwhile, beat cold mascarpone and powdered sugar together until smooth. Add the vanilla, 1 tablespoon espresso powder, and salt; beat to combine, scraping down the sides when done.

    While mixing, slowly add the cream; mix until incorporated. Scrape down the sides, and beat about 1 to 2 minutes longer or until fluffy.

    Pipe or spread the frosting onto the cooled cookies, and dust with cocoa or grated chocolate.
