Slow-Cooker Double Ginger Apple Butter

Ingredients
- 3 lb Gala apples, peeled, cored and shredded
- 1/2 cup packed light brown sugar
- 2 tablespoons finely chopped crystallized ginger
- 1 tablespoon finely chopped gingerroot
- 1/4 teaspoon salt
Instructions

Step1Spray 5-quart slow cooker with cooking spray. Add all ingredients. Stir to combine.

Step2Cover; cook on High heat setting 3 hours.

Step3Uncover; cook on High heat setting 1 to 2 hours longer, stirring occasionally, until mixture has thickened. Turn off heat; let cool 15 minutes.

Step4In blender or food processor, puree mixture (in batches, if needed) until smooth.

Step5Cool completely. Transfer apple butter to jars; seal tightly. Store in refrigerator.
